Romanian Roasted Peppers Salad is a traditional dish featuring sweet roasted red peppers tossed in a tangy garlic and vinegar dressing. Light, refreshing, and full of flavor, it makes an excellent side dish or appetizer.

Ingredients

  • 6 large red bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the bell peppers on a baking sheet and roast for 30 to 40 minutes, turning occasionally, until charred and blistered.
  3. Transfer the peppers to a bowl and cover tightly. Let steam for 15 minutes.
  4. Peel off the skins and remove the stems and seeds.
  5. Slice the peppers into long strips and place them in a serving bowl.
  6. Whisk together the garlic, olive oil, vinegar, sugar, salt, and black pepper.
  7. Pour the dressing over the peppers and gently toss to coat.
  8. Cover and refrigerate for at least 30 minutes.
  9. Sprinkle with parsley if desired.
  10. Serve chilled or at room temperature.

Notes

  • Kapia peppers can be used for a more traditional Romanian flavor.
  • Roast peppers over an open flame or grill for a smokier taste.
  • The salad tastes even better after chilling overnight.
  • Add fresh dill for additional herbal flavor.
  • Store in the refrigerator for up to 4 days.
  • Do not freeze, as the texture may become too soft.
