Roasted Salmon with Spring Pesto is a fresh and flavorful dish featuring tender roasted salmon topped with vibrant homemade pesto made from fresh herbs and seasonal greens. This healthy and elegant meal is perfect for weeknight dinners or special occasions.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 lemon, sliced
  • 2 cups fresh basil or mixed herbs
  • 1 cup spinach or arugula
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts or almonds
  • 2 garlic cloves
  • 1/3 cup olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet and drizzle with olive oil.
  3. Season the salmon with salt and black pepper.
  4. Arrange lemon slices over the salmon fillets.
  5. Roast the salmon for 12 to 15 minutes until the fish flakes easily with a fork.
  6. While the salmon cooks, prepare the pesto by combining basil or mixed herbs, spinach or arugula, Parmesan cheese, nuts, garlic, olive oil, lemon juice, salt, and black pepper in a food processor.
  7. Blend until smooth, adding more olive oil if needed for desired consistency.
  8. Remove the salmon from the oven and spoon the spring pesto over the top.
  9. Serve warm with your favorite vegetables, grains, or salad.
