Savory roasted mushrooms coated in a rich miso glaze, caramelized to perfection with deep umami flavor and a tender yet slightly crisp texture.

Ingredients

  • Mushrooms (such as cremini, button, or shiitake)
  • White or yellow miso paste
  • Soy sauce
  • Olive oil or sesame oil
  • Maple syrup or honey
  • Garlic
  • Rice vinegar
  • Black pepper
  • Green onions (optional, for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms and trim stems, cutting larger ones into halves or quarters.
  3. In a bowl, whisk together miso paste, soy sauce, oil, maple syrup or honey, minced garlic, rice vinegar, and black pepper until smooth.
  4. Add mushrooms to the bowl and toss until evenly coated.
  5. Spread mushrooms in a single layer on the prepared baking sheet.
  6. Roast for 20–25 minutes, stirring halfway through, until tender and caramelized.
  7. Remove from the oven and garnish with green onions and sesame seeds if desired.
  8. Serve warm.

  • Use a mix of mushrooms for deeper flavor.
  • Add chili flakes or chili paste for a spicy kick.
  • Ensure mushrooms are spread out to avoid steaming.
