Roasted Garlic Parmesan Baby Potatoes are tender baby potatoes coated in a savory blend of garlic, Parmesan cheese, and herbs, roasted to crispy golden perfection with a rich, cheesy crust.

Ingredients

  1. 1.5 pounds baby potatoes, halved if larger
    3 tablespoons olive oil
    4 cloves garlic, minced
    1/2 cup grated Parmesan cheese
    1 teaspoon dried Italian seasoning or dried oregano
    Salt, to taste
    Freshly ground black pepper, to taste
    Optional: chopped fresh parsley for garnish

Instructions

Preheat oven to 400°F (200°C).

  1. In a large bowl, toss baby potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper.
  2. Spread potatoes in a single layer on a parchment-lined baking sheet.
  3. Roast for 25-30 minutes, stirring halfway, until tender and golden brown.
  4. Remove from oven, sprinkle Parmesan evenly over potatoes.
  5. Return to oven and roast for an additional 5-7 minutes until cheese is melted and crispy.
  6. Garnish with chopped parsley if desired and serve warm.
