Ingredients

  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 1½ cups cooked chicken breast, shredded or diced
  • 2 cups fresh spinach
  • 1 head garlic
  • 1 cup mozzarella cheese, shredded
  • ½ cup provolone cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 475°F (245°C).
  2. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
  3. Allow the garlic to cool slightly, then squeeze the cloves into a small bowl and mash into a paste.
  4. In a saucepan over medium heat, melt the butter.
  5. Whisk in the flour and cook for 1 minute.
  6. Gradually whisk in the milk until smooth.
  7. Add the salt, black pepper, and half of the roasted garlic paste.
  8. Simmer until slightly thickened, then remove from the heat.
  9. Stretch or roll the pizza dough into a 12- to 14-inch round.
  10. Transfer the dough to a pizza pan or pizza peel.
  11. Spread the white sauce evenly over the dough.
  12. Sprinkle the mozzarella and provolone cheeses over the sauce.
  13. Distribute the chicken evenly across the pizza.
  14. Add small dollops of the remaining roasted garlic paste.
  15. Scatter the spinach over the top.
  16. Finish with the Parmesan cheese.
  17. Bake for 12–15 minutes until the crust is golden brown and the cheese is bubbly.
  18. Remove from the oven, cool for 2–3 minutes, slice, and serve warm.

  • Rotisserie chicken is a convenient substitute for cooked chicken breast.
