Ingredients

  • 2 medium delicata squash, sliced into rings with seeds removed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons honey
  • 1/3 cup grated parmesan cheese
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons fresh thyme or parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the delicata squash into rings and remove the seeds.
  3. Toss the squash with olive oil, salt, and pepper until evenly coated.
  4. Arrange in a single layer on a baking sheet.
  5. Roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
  6. Drizzle the warm squash with honey.
  7. Sprinkle with grated parmesan and toasted pine nuts.
  8. Garnish with fresh herbs if desired and serve immediately.

Notes

  • Add chili flakes for a sweet and spicy variation.
  • Substitute walnuts or pecans for pine nuts.
  • Use maple syrup instead of honey for a different sweetness.
  • Roast ahead and reheat before adding toppings.
  • Store leftovers in the refrigerator for up to 3 days and reheat in the oven.
