Ingredients

  1. 1 bunch asparagus, trimmed and cut into 2-inch pieces
    8 ounces mushrooms (cremini or button), cleaned and sliced
    3 tablespoons olive oil
    2 cloves garlic, minced
    Salt, to taste
    Freshly ground black pepper, to taste
    Optional: fresh thyme or parsley for garnish

Instructions

Preheat oven to 425°F (220°C).

  1. Toss asparagus and mushrooms with olive oil, minced garlic, salt, and pepper in a large bowl.
  2. Spread vegetables in a single layer on a baking sheet.
  3. Roast for 15-20 minutes, stirring halfway through, until asparagus is tender and mushrooms are golden brown.
