Ingredients

  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, roughly chopped
  • 1½ cups mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Red pepper flakes (optional)
  • Sliced mushrooms (optional)
  • Caramelized onions (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Preheat the oven to 475°F (245°C).
  2. Place a pizza stone in the oven or lightly grease a pizza pan.
  3. In a small bowl, combine the ricotta cheese, garlic, salt, and black pepper.
  4. Stretch or roll the pizza dough into a 12- to 14-inch round.
  5. Transfer the dough to a pizza peel or prepared pizza pan.
  6. Brush the surface lightly with olive oil.
  7. Sprinkle the mozzarella cheese evenly over the dough.
  8. Dollop the ricotta mixture across the pizza.
  9. Scatter the chopped spinach evenly over the top.
  10. Sprinkle with Parmesan cheese.
  11. Add any optional toppings if desired.
  12. Bake for 12–15 minutes, or until the crust is golden brown and the cheese is bubbling.
  13. Remove from the oven and allow the pizza to cool for 2–3 minutes.
  14. Garnish with fresh basil or red pepper flakes if desired.
  15. Slice and serve warm.
