Ingredients

  • 1 cup ricotta cheese

  • 3 large eggs

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the ricotta cheese, vanilla extract, and lemon zest until smooth.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about three-quarters full.
  8. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool in the pan for a few minutes before transferring to a wire rack.
