Ingredients

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  3. In another bowl, whisk together ricotta cheese, eggs, melted butter, milk, lemon zest, lemon juice, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Divide the batter evenly into the muffin cups.
  6. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
