Ingredients

  • 2 cups long-grain rice
  • 2 cups black beans or pinto beans
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat the olive oil in a large skillet or pot over medium heat.
  3. Add the diced onion and cook until softened.
  4. Stir in the minced garlic and cook for about 1 minute.
  5. Add the rice and cook briefly, stirring to coat it with oil and aromatics.
  6. Pour in the broth and bring to a boil.
  7. Stir in the cumin, paprika, oregano, salt, and black pepper.
  8. Reduce the heat to low, cover, and simmer until the rice is tender.
  9. Stir in the beans and cook until heated through.
  10. Finish with lime juice and fresh cilantro before serving.
