Ingredients

  • 4 cups chopped rhubarb
  • 3/4 cup fresh lemon juice
  • 1 cup fresh orange juice
  • 1 teaspoon orange zest
  • 3/4 cup sugar or honey
  • 4 cardamom pods or 1/2 teaspoon ground cardamom
  • 6 cups water, divided
  • 2 cups ice cubes
  • Optional: orange slices
  • Optional: lemon slices
  • Optional: fresh mint leaves
  • Optional: rhubarb ribbons

Instructions

  1. Chop the rhubarb into small pieces.
  2. In a saucepan, combine the rhubarb, 3 cups water, sugar or honey, and cardamom.
  3. Bring the mixture to a simmer over medium heat and cook until the rhubarb softens completely, about 15 minutes.
  4. Remove from heat and let the mixture cool slightly.
  5. Strain the liquid through a fine mesh sieve into a pitcher, pressing gently to extract the juices.
  6. Stir in the fresh lemon juice, orange juice, and orange zest.
  7. Add the remaining cold water and adjust sweetness to taste.
  8. Refrigerate until fully chilled.
  9. Serve over ice with optional garnishes such as orange slices, mint, or rhubarb ribbons.
