Rhubarb Cake is a moist and tender dessert that combines the bright tartness of fresh rhubarb with a soft cake and buttery cinnamon-sugar topping. Perfect for spring and summer baking, it can be enjoyed as a dessert, snack, or coffee cake.

Ingredients

  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter, softened
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • Buttermilk
  • Fresh rhubarb, diced
  • Brown sugar
  • Ground cinnamon
  • Unsalted butter, melted
  • Whipped cream (optional serving suggestion)
  • Vanilla ice cream (optional serving suggestion)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking dish.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. Add the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients.
  8. Fold in the diced rhubarb until evenly distributed.
  9. Spread the batter evenly into the prepared baking dish.
  10. In a small bowl, combine the brown sugar, cinnamon, and melted butter.
  11. Sprinkle the topping mixture evenly over the batter.
  12. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  13. Allow the cake to cool before slicing and serving.
  14. Serve plain or with whipped cream or vanilla ice cream if desired.
