A comforting and satisfying meal, the refried bean burrito combines creamy refried beans with melted cheese, wrapped in a warm flour tortilla. This vegetarian-friendly dish is perfect for a quick lunch, dinner, or a hearty snack.

Ingredients

  1. 1 (16 oz) can refried beans
    1/2 cup chunky salsa
    1/4 cup diced onion
    1 teaspoon taco seasoning
    1/4 teaspoon kosher salt, plus more to taste
    2 cups shredded cheddar cheese
    4 (10-inch) flour tortillas

Instructions

Prepare the Bean Mixture: In a medium bowl, combine refried beans, salsa, diced onion, taco seasoning, and salt. Mix until well combined.

  1. Heat the Tortillas: Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or until pliable.
  2. Assemble the Burritos: Place a tortilla on a flat surface. Spread 1/4 of the bean mixture in the center of the tortilla. Sprinkle 1/2 cup of shredded cheddar cheese over the beans.
  3. Roll the Burritos: Fold in the sides of the tortilla, then roll from the bottom up, enclosing the filling.
  4. Cook the Burritos: Heat a skillet over medium heat. Place the burritos seam-side down and cook for 2–3 minutes per side, or until golden brown and the cheese is melted.
  5. Serve: Remove from the skillet, slice in half, and serve with your favorite toppings.
