Ingredients

  • 2 1/2 lbs red potatoes
  • 4 tbsp butter
  • 1/2 cup heavy cream or whole milk, warmed
  • 1/4 cup sour cream (optional)
  • 2 garlic cloves, minced or roasted
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh chives
  • 2 tbsp chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Wash the red potatoes thoroughly and cut them into evenly sized pieces, leaving the skins on.
  2. Place the potatoes in a large pot, cover with cold salted water, and bring to a boil.
  3. Cook until the potatoes are fork-tender, about 20 to 25 minutes.
  4. Drain well and return the potatoes to the warm pot for 1 minute to remove excess moisture.
  5. Add the butter, warm cream or milk, and sour cream if using.
  6. Mash to your desired consistency, leaving a few small chunks for a rustic texture.
  7. Stir in the garlic, salt, black pepper, and Parmesan cheese if desired.
  8. Fold in the chopped chives and parsley.
  9. Serve warm with an extra pat of butter or a sprinkle of fresh herbs.
