  • 1 small onion, diced
  • 1/2 cup vegetable broth
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach

  • 1/4 tsp red pepper flakes
  • Fresh basil or parsley for garnish

  2. Add the diced onion and cook until softened, about 4 to 5 minutes. Stir in the minced garlic and cook until fragrant.
  3. Add the cherry tomatoes and cook for 3 to 4 minutes until they begin to soften.
  4. Stir in the red pesto and vegetable broth until well combined.
  5. Add the butter beans and simmer gently for 5 to 7 minutes to allow the flavors to blend.
  6. Stir in the spinach and cook until wilted.
  7. Season with salt, black pepper, and red pepper flakes to taste.
  8. Sprinkle with parmesan cheese and garnish with fresh basil or parsley before serving.

Notes

  • Add grilled chicken or sausage for extra protein.
  • Use kale instead of spinach for a heartier texture.
  • Stir in a splash of heavy cream for a richer sauce.
  • White beans or chickpeas can be substituted for butter beans.
  • Serve with crusty bread, rice, or roasted vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 2 months and thaw overnight before reheating.
