Raspberry Vanilla Jello Fruit Salad is a light, creamy, and refreshing no-bake dessert made with raspberry gelatin, vanilla pudding, juicy fruit, and fluffy whipped topping. It’s a colorful make-ahead treat that’s perfect for holidays, potlucks, picnics, and family gatherings.

Ingredients

  • Raspberry gelatin mix
  • Instant vanilla pudding mix
  • Whipped topping, thawed
  • Fresh or frozen raspberries
  • Crushed pineapple, well-drained
  • Mandarin oranges, drained
  • Seedless grapes, halved
  • Mini marshmallows
  • Plain Greek yogurt or sour cream (optional)
  • Chopped pecans or walnuts (optional)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Prepare the raspberry gelatin according to the package directions, using slightly less water if you prefer a firmer texture. Allow it to cool until slightly thickened but not fully set.
  2. In a large mixing bowl, whisk the vanilla pudding mix into the cooled gelatin until smooth.
  3. Fold in the whipped topping until fully combined.
  4. If using, stir in the Greek yogurt or sour cream for extra creaminess.
  5. Add the raspberries, drained pineapple, mandarin oranges, grapes, and mini marshmallows.
  6. Fold everything together gently to avoid breaking the fruit.
  7. Stir in the chopped pecans or walnuts if desired.
  8. Cover and refrigerate for 2–3 hours, or until well chilled and slightly set.
  9. Garnish with fresh raspberries and mint leaves before serving if desired.

Notes

  • Drain canned fruit thoroughly to prevent a watery salad.
  • Thaw and drain frozen raspberries before using.
  • Stabilized homemade whipped cream can replace whipped topping.
  • White chocolate or cheesecake pudding can be substituted for vanilla pudding.
  • Store covered in the refrigerator for up to 3 days.
  • Freezing is not recommended because the texture may change after thawing.
