Ramekin Brownies are rich, fudgy single-serve brownies baked in individual ramekins. With crisp tops and gooey centers, they’re a perfect warm dessert for any occasion, especially when paired with ice cream or whipped cream.

Ingredients

  1. 1/2 cup unsalted butter
  2. 4 oz semi-sweet or dark chocolate, chopped (or 2/3 cup chocolate chips)
  3. 1/2 cup granulated sugar
  4. 1/4 cup brown sugar
  5. 2 large eggs
  6. 1 tsp vanilla extract
  7. 1/3 cup all-purpose flour
  8. 2 tbsp unsweetened cocoa powder
  9. 1/4 tsp salt
  10. Optional mix-ins: chocolate chips, chopped nuts, caramel swirls

Instructions

Preheat oven to 350°F (175°C). Grease 4 to 6 ramekins with butter or nonstick spray.

  1. In a microwave-safe bowl, melt butter and chocolate in 20-second intervals, stirring until smooth.
  2. Whisk in granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. Sift in flour, cocoa powder, and salt. Stir gently until just combined—do not overmix.
  4. Fold in any optional mix-ins.
  5. Divide the batter evenly among the prepared ramekins.
  6. Bake for 18–22 minutes, until the tops are set and a toothpick comes out with moist crumbs.
  7. Serve warm on their own or with ice cream, whipped cream, or chocolate/caramel drizzle.

Notes

  • For a molten center, bake for only 15–17 minutes.
  • Use high-quality chocolate for best flavor.
  • Serve immediately after baking for the gooeyest texture.
  • Optional toppings include berries, nuts, or a sprinkle of sea salt.
  • Recipe can be doubled to serve a larger group.
