Rainbow Unicorn Toast is a colorful breakfast made with creamy sweetened cream cheese swirled into vibrant pastel hues and spread over crispy toast. It’s a fun, magical treat that’s perfect for birthdays, brunches, or brightening any morning.

Ingredients

  • 4 thick slices of white bread, brioche, or sourdough
  • 8 oz cream cheese, softened
  • 2 tbsp plain Greek yogurt (optional)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Gel food coloring (pink, blue, purple, yellow, and green)
  • 2 tbsp rainbow sprinkles
  • Edible glitter (optional)
  • Fresh berries (optional)
  • Banana slices (optional)

Instructions

  1. Toast the bread slices until lightly golden and crisp.
  2. Mix the softened cream cheese with the honey and vanilla extract until smooth. Stir in the Greek yogurt if using.
  3. Divide the cream cheese mixture into several small bowls.
  4. Tint each portion with a different gel food coloring until vibrant.
  5. Spoon small dollops of each colored mixture onto the toasted bread.
  6. Gently swirl the colors together with the back of a spoon or a butter knife to create a rainbow effect without overmixing.
  7. Decorate with rainbow sprinkles, edible glitter, fresh berries, or banana slices if desired.
  8. Serve immediately while the toast is crisp.

Notes

  • Gel food coloring creates brighter colors without thinning the spread.
  • Use whipped cream cheese for an extra light and fluffy texture.
  • Replace some or all of the cream cheese with Greek yogurt for a lighter version.
  • Store leftover colored spread in an airtight container in the refrigerator for up to 3 days.
