Quick Pickled Green Beans are crisp, tangy refrigerator pickles made with fresh green beans, garlic, dill, and a simple vinegar brine. Easy to prepare and full of flavor, they make a delicious snack or accompaniment to sandwiches and charcuterie boards.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 garlic cloves, peeled
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 sprigs fresh dill
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated sugar

Instructions

  1. Wash and trim the green beans.
  2. Pack the green beans vertically into a clean 1-quart glass jar.
  3. Add the garlic cloves, black peppercorns, mustard seeds, red pepper flakes if using, and dill sprigs.
  4. In a small saucepan, combine the vinegar, water, kosher salt, and sugar.
  5. Bring the mixture to a gentle simmer, stirring until the salt and sugar dissolve.
  6. Remove the brine from the heat.
  7. Carefully pour the hot brine over the green beans until completely submerged.
  8. Allow the jar to cool to room temperature.
  9. Seal the jar with a lid.
  10. Refrigerate for at least 24 hours before serving.
  11. For best flavor, allow the beans to pickle for 2 to 3 days before enjoying.

  • Use apple cider vinegar for a slightly sweeter flavor profile.
