Pumpkin Oatmeal is a warm and creamy breakfast made with hearty rolled oats, pumpkin puree, maple syrup, and cozy fall spices. Ready in about 15 minutes, it delivers pumpkin pie-inspired flavor in an easy everyday breakfast.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup pumpkin puree
  • 1 cup milk
  • 1 cup water
  • 2 tablespoons pure maple syrup or brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chopped pecans or walnuts, optional
  • Pumpkin seeds, optional
  • Nut butter, optional

Instructions

  1. Add the milk and water to a medium saucepan and bring to a gentle simmer over medium heat.
  2. Stir in the rolled oats and reduce the heat to medium-low.
  3. Cook for about 5 minutes, stirring occasionally so the oats cook evenly and do not stick to the saucepan.
  4. Stir in the pumpkin puree, cinnamon, ginger, nutmeg, cloves, and salt.
  5. Continue cooking for 3 to 5 minutes, stirring frequently, until the oatmeal reaches the desired consistency.
  6. Stir in the maple syrup or brown sugar and vanilla extract.
  7. If the oatmeal is too thick, add a splash of milk and stir until creamy.
  8. Divide between bowls and serve with desired toppings such as chopped pecans, pumpkin seeds, nut butter, additional maple syrup, or cinnamon.

Notes

  • Use 100% plain pumpkin puree rather than pumpkin pie filling, which contains added sweeteners and spices.
  • For Pumpkin Pecan Oatmeal, top each bowl with toasted chopped pecans.
  • For additional protein, stir in Greek yogurt after cooking or add almond or peanut butter.
  • For Apple Pumpkin Oatmeal, add finely diced firm apple while the oats cook.
  • For a dairy-free version, use unsweetened oat, almond, soy, or coconut milk.
  • Quick oats can be substituted, but reduce the cooking time because they soften more quickly.
  • Store leftover oatmeal in an airtight container in the refrigerator for up to 4 days.
