  • Cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon in a large bowl.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla until smooth.
  6. Pour half of the pumpkin batter into the prepared loaf pan.
  7. Spread the cream cheese filling evenly over the batter, leaving a small border around the edges.
  8. Carefully spoon the remaining pumpkin batter over the filling and smooth the top.
  9. Bake for 55–65 minutes, or until a toothpick inserted into the pumpkin portion comes out clean.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Homemade pumpkin puree may be used if it is thick and well-drained.
  • A slight crack on top is normal for quick breads.
  • Add chopped pecans, walnuts, or chocolate chips for extra flavor and texture.
  • Store in the refrigerator for up to 5 days because of the cream cheese filling.
  • Freeze the whole loaf or individual slices for up to 3 months.
  • Serve with coffee, tea, apple cider, or hot chocolate.
