Ingredients
1 cup chocolate protein powder
1/2 cup cocoa powder
1/2 cup oat flour or blended oats
1/2 cup sweetener (such as sugar or maple syrup)
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/2 cup milk or plant-based milk
1/4 cup melted coconut oil or butter
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
In a bowl, mix protein powder, cocoa powder, oat flour, sweetener, baking powder, and salt.
In another bowl, whisk eggs, milk, melted oil or butter, and vanilla extract.
Combine wet and dry ingredients, mixing until smooth.
Fold in chocolate chips if using.
Pour batter into prepared pan and spread evenly.
Bake for 18 to 22 minutes until set in the center.
Cool completely before slicing.
Notes
Do not overbake to keep brownies moist.
Adjust sweetener to taste.
