Ingredients

  • 1 wheel Brie cheese (8 ounces)
  • 4 to 6 slices prosciutto
  • 1 ripe peach, thinly sliced
  • 1 sheet puff pastry, thawed
  • 1 tablespoon peach preserves
  • 1 egg
  • 1 tablespoon water
  • 1 tablespoon fresh thyme leaves
  • Freshly ground black pepper, to taste
  • 1 tablespoon chopped pecans or walnuts (optional)
  • Honey, for drizzling (optional)
  • Crackers, crostini, or sliced baguette, for serving

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface until large enough to wrap around the Brie.
  3. Spread the peach preserves over the top of the Brie.
  4. Arrange the peach slices over the preserves and sprinkle with the thyme leaves.
  5. Scatter the chopped pecans or walnuts over the peaches if using.
  6. Wrap the prosciutto slices around the Brie, covering the peach layer as evenly as possible.
  7. Place the wrapped Brie in the center of the puff pastry and fold the pastry over the cheese, sealing the edges underneath.
  8. Whisk together the egg and water to make an egg wash, then brush it over the pastry.
  9. Bake for 25 to 30 minutes, until the pastry is puffed and deep golden brown.
  10. Let the baked Brie rest for about 10 minutes.
  11. Drizzle with honey if desired and serve warm with crackers, crostini, or sliced baguette.
