This Prime Rib French Dip transforms leftover prime rib into a restaurant-worthy sandwich with tender beef, melted provolone, and toasted rolls served alongside a rich, savory au jus. It’s a quick and satisfying meal that’s perfect for lunch, dinner, or game day.

Ingredients

  • 1 pound cooked prime rib, thinly sliced
  • 4 hoagie rolls or French sandwich rolls
  • 4 slices provolone cheese
  • 2 tablespoons butter
  • 2 teaspoons olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat the butter and olive oil in a skillet over medium heat.
  2. Add the sliced onion and cook until soft and lightly caramelized. Stir in the garlic and cook for 1 minute.
  3. Pour in the beef broth, Worcestershire sauce, and thyme. Season with salt and black pepper, then simmer for about 10 minutes.
  4. Gently warm the sliced prime rib in the simmering au jus for 1 to 2 minutes without overcooking.
  5. Split the hoagie rolls and toast until lightly golden.
  6. Fill each roll with warm prime rib and top with a slice of provolone cheese.
  7. Place the sandwiches under the broiler for 1 to 2 minutes, or until the cheese is melted.
  8. Garnish with chopped parsley if desired and serve immediately with small bowls of warm au jus for dipping.
