Crispy roasted potatoes paired with a creamy, tangy whipped feta create a perfect balance of texture and flavor. This simple yet elegant dish is ideal as a side, appetizer, or light meal.

Ingredients

  • 1.5 lbs baby potatoes or small Yukon gold potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder or 2 cloves fresh garlic, minced
  • 1 teaspoon paprika or smoked paprika
  • 7 oz feta cheese
  • 1/2 cup Greek yogurt or cream cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (for whipped feta)
  • 2 tablespoons fresh herbs (parsley, dill, or chives), chopped
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the potatoes, or leave whole if very small.
  3. Toss the potatoes with olive oil, salt, pepper, garlic, and paprika until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast for 30–35 minutes, turning halfway through, until golden and crispy.
  6. Meanwhile, prepare the whipped feta by blending feta cheese, Greek yogurt (or cream cheese), lemon juice, and olive oil until smooth and creamy.
  7. Spread the whipped feta onto a serving plate or bowl.
  8. Top with the hot roasted potatoes.
  9. Garnish with fresh herbs and chili flakes if desired, and serve immediately.

  • Smash the potatoes slightly before roasting for extra crispiness.
  • Add cayenne or hot sauce for a spicier version.
  • Mix herbs directly into the whipped feta for added flavor.
