Potatoes O’Brien are a classic skillet side featuring crispy diced potatoes, colorful bell peppers, savory onions, and simple seasonings. They are perfect for breakfast or brunch and pair equally well with chicken, steak, or pork for dinner.

Ingredients

  • Russet or Yukon Gold potatoes
  • Red bell pepper, diced
  • Green bell pepper, diced
  • Yellow onion, diced
  • Garlic, minced
  • Olive oil
  • Unsalted butter
  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Fresh parsley, chopped

Instructions

  1. Wash and peel the potatoes if desired, then cut them into small, evenly sized cubes.
  2. Place the diced potatoes in a saucepan, cover with cold salted water, and bring to a gentle boil.
  3. Parboil the potatoes for 4–5 minutes, until slightly tender around the edges but still firm enough to hold their shape.
  4. Drain thoroughly, spread the potatoes over a clean kitchen towel or paper towels, and pat them dry.
  5. Heat the olive oil and half of the butter in a large skillet over medium-high heat.
  6. Add the potatoes in an even layer and allow them to cook without constant stirring so they can develop a golden crust.
  7. Turn the potatoes occasionally and cook for 10–12 minutes, until browned and crisp on several sides.
  8. Reduce the heat slightly and add the remaining butter, red bell pepper, green bell pepper, and onion.
  9. Cook for another 6–8 minutes, stirring occasionally, until the peppers and onions are tender and lightly browned.
  10. Add the garlic, paprika, garlic powder, salt, and black pepper. Cook for another 1–2 minutes, until fragrant.
  11. Taste and adjust the seasoning as needed.
  12. Sprinkle with fresh parsley and serve immediately while hot and crispy.

  • Cut the potatoes into small, uniform cubes for even cooking and browning.
  • Dry the parboiled potatoes thoroughly and avoid overcrowding the skillet for crispier results.
  • For cheesy Potatoes O’Brien, add shredded cheddar, Monterey Jack, or pepper Jack during the final few minutes.
