Potato Soup is a rich, creamy, and comforting classic made with tender potatoes, onions, garlic, and a velvety broth. It’s an easy homemade soup that’s perfect for chilly evenings and can be customized with your favorite toppings.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 pounds potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese (optional)
  • 4 slices cooked bacon, crumbled (optional)
  • Chopped green onions or chives, for garnish

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and cook until softened, then stir in the garlic and cook for 1 minute.
  3. Sprinkle in the flour and stir continuously for about 1 minute.
  4. Gradually whisk in the broth until smooth.
  5. Add the diced potatoes, dried thyme, salt, and black pepper.
  6. Bring the soup to a gentle boil, then reduce the heat and simmer for about 20 minutes, or until the potatoes are tender.
  7. Mash some of the potatoes or blend part of the soup for a creamier texture while leaving some chunks.
  8. Stir in the milk and heavy cream, heating gently without bringing the soup to a boil.
  9. Mix in the shredded cheddar cheese, if using, and stir until melted.
  10. Serve hot, topped with crumbled bacon, green onions or chives, and extra cheese if desired.
