Portobello Steak with Vegetables is a hearty plant-based meal featuring juicy marinated portobello mushrooms paired with colorful roasted or grilled vegetables. It’s a flavorful, satisfying dinner that’s simple enough for weeknights and elegant enough for entertaining.

Ingredients

  • 4 large portobello mushroom caps, stems removed
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 zucchini, sliced
  • 2 bell peppers, cut into strips
  • 1 red onion, cut into wedges
  • 1 cup asparagus spears
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Whisk together the olive oil, balsamic vinegar, soy sauce, garlic, Dijon mustard, smoked paprika, thyme, salt, and black pepper in a shallow dish.
  2. Add the portobello mushroom caps to the marinade and let them soak for 20 to 30 minutes, turning halfway through.
  3. Preheat the oven to 425°F (220°C) or heat a grill to medium-high.
  4. Toss the zucchini, bell peppers, red onion, and asparagus with olive oil, salt, and black pepper.
  5. Roast the vegetables for 20 to 25 minutes or grill until tender with light char marks.
  6. Grill the marinated portobello mushrooms for 5 to 6 minutes per side, or roast until tender and juicy.
  7. Arrange the vegetables on serving plates and place a portobello mushroom on top or alongside.
  8. Garnish with freshly chopped parsley and serve immediately.
