This Portobello Mushroom Sandwich is a hearty meatless meal featuring juicy, marinated mushrooms, fresh vegetables, and your choice of creamy spread on a toasted bun. It’s flavorful, satisfying, and perfect for lunch or a simple dinner.

Ingredients

  • 4 large portobello mushroom caps, stems removed
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 sandwich buns or brioche buns
  • 4 slices provolone, Swiss, or mozzarella cheese (optional)
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • Sliced avocado (optional)
  • Mayonnaise, pesto, or garlic aioli, for spreading

Instructions

  1. Whisk together the olive oil, balsamic vinegar, garlic, Dijon mustard, Italian seasoning, salt, and black pepper to make the marinade.
  2. Brush the marinade generously over both sides of the portobello mushrooms and let them marinate for 15 to 20 minutes.
  3. Preheat a grill, grill pan, or oven to medium-high heat.
  4. Cook the mushrooms for 5 to 7 minutes per side until tender and juicy.
  5. Place a slice of cheese on each mushroom during the last minute of cooking if using cheese.
  6. Lightly toast the sandwich buns until golden.
  7. Spread mayonnaise, pesto, or garlic aioli on the buns.
  8. Layer the lettuce, grilled mushroom, tomato, red onion, and avocado on the bottom bun.
  9. Top with the remaining bun and serve immediately.
