Ingredients

  • Chicken pieces (bone-in or boneless)
  • Olive oil
  • Onion, sliced
  • Garlic, minced
  • Carrots, sliced
  • Bay leaves
  • Black peppercorns
  • Vinegar (white or apple cider)
  • Chicken broth
  • Oregano
  • Salt and pepper

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a large pan and brown the chicken on all sides. Remove and set aside.
  3. In the same pan, sauté onions, garlic, and carrots until slightly softened.
  4. Add vinegar, chicken broth, bay leaves, peppercorns, and oregano, then bring to a simmer.
  5. Return the chicken to the pan and cover.
  6. Simmer for 25–30 minutes until the chicken is tender and fully cooked.
  7. Allow the dish to cool to let the flavors develop.
  8. Serve at room temperature or chilled.

Notes

  • Add chili flakes or peppers for a spicy variation.
  • Include olives or bell peppers for extra flavor.
  • A touch of sugar or honey can balance the acidity.
  • Store in the refrigerator for up to 4 days in an airtight container.
  • This dish tastes even better after resting overnight.
