Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1 cup unsalted butter, softened, for buttercream
  • 3 cups powdered sugar
  • 23 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract, for buttercream
  • Pinch of salt, for buttercream
  • 12 large chocolate candies, chocolate melting wafers, or similar round candies
  • 48 small chocolate candies or chocolate chips
  • White sanding sugar, optional
  • Shredded coconut, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line a standard 12-cup muffin pan with cupcake liners.
  2. Whisk together the flour, baking powder, and salt in a medium bowl until evenly combined.
  3. In a large mixing bowl, beat the softened butter and granulated sugar until pale, light, and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix only until combined.
  6. Divide the batter evenly among the prepared cupcake liners, filling each approximately two-thirds full.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool the cupcakes in the pan for about 5 minutes, then transfer them to a wire rack and cool completely.
  9. For the buttercream, beat the softened butter until smooth and creamy. Gradually add the powdered sugar, then mix in the vanilla and salt.
  10. Add the heavy cream or milk a little at a time until the frosting is smooth, fluffy, and easy to spread.
  11. Spread or pipe a generous layer of white buttercream over each cooled cupcake. Sprinkle with white sanding sugar or gently press shredded coconut into the frosting for a snowy appearance, if desired.
  12. Place one large chocolate candy near the center of each cupcake to create the main paw pad.
  13. Arrange four smaller chocolate candies or chocolate chips above the large candy to form the toes.
  14. Gently press the candies into the frosting to secure them, then serve.

Notes

  • Chocolate cupcakes can be substituted for vanilla cupcakes for a richer flavor and stronger contrast with the white frosting.
  • Press shredded coconut into freshly frosted cupcakes to create a fluffy polar bear fur or snow effect.
  • Chocolate sandwich cookies or mini sandwich cookies can be used for the paw pads.
  • For mini cupcakes, use mini chocolate chips or small candies to create appropriately sized paw prints and begin checking the cupcakes earlier while baking.
  • Colorful candy-coated chocolates can replace the chocolate candies for playful paw prints.
  • A white, vanilla, or chocolate boxed cake mix can be used as a shortcut.
  • Store decorated cupcakes in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days.
  • Unfrosted cupcakes can be wrapped individually and frozen for up to 2–3 months. Thaw completely at room temperature before decorating.
  • Bring refrigerated cupcakes to room temperature for 20–30 minutes before serving. Do not reheat decorated cupcakes.
