Plum Sauce for Duck is a rich, sweet-tangy condiment made with ripe plums, aromatic spices, and a balanced blend of sugar and acidity. It enhances duck dishes with a glossy, flavorful finish.

Ingredients

  • fresh plums
  • sugar
  • soy sauce
  • rice vinegar
  • garlic
  • ginger
  • water
  • cornstarch

Instructions

  1. Wash, pit, and chop the plums.
  2. In a saucepan over medium heat, combine plums, sugar, soy sauce, rice vinegar, garlic, ginger, and water.
  3. Bring to a gentle simmer and cook for 15 to 20 minutes until plums soften and break down.
  4. Blend the mixture until smooth using a blender or immersion blender.
  5. In a small bowl, mix cornstarch with water to form a slurry.
  6. Stir the slurry into the sauce and cook for 2 to 3 minutes until thickened.
  7. Remove from heat and let cool slightly before serving.

Notes

  • Strain the sauce for an extra smooth texture if desired.
  • Add chili flakes for heat or orange zest for a citrus twist.
  • Store in the refrigerator for up to 1 week.
  • Reheat gently and add water if the sauce thickens too much.
  • Can be frozen for up to 2 months.
