Pizza Tortellini combines tender cheese-filled pasta with savory pizza sauce, pepperoni, mozzarella, and Parmesan in an easy baked casserole. It is a comforting, customizable dinner that’s perfect for busy weeknights.

Ingredients

  • Cheese tortellini
  • Pizza sauce
  • Sliced pepperoni
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Italian seasoning
  • Garlic powder
  • Olive oil
  • Fresh basil or parsley, optional

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish with olive oil.
  2. Bring a pot of salted water to a boil and cook the cheese tortellini until just tender according to the package directions. Drain well and avoid overcooking, as the pasta will continue cooking in the oven.
  3. Transfer the drained tortellini to a large bowl. Gently toss with the pizza sauce, Italian seasoning, garlic powder, and most of the sliced pepperoni.
  4. Spread the saucy tortellini evenly in the prepared baking dish.
  5. Sprinkle the mozzarella and Parmesan evenly over the tortellini, then arrange the remaining pepperoni on top.
  6. Bake for 15 to 20 minutes, until the sauce is hot and bubbling and the cheese is completely melted.
  7. Let the Pizza Tortellini rest for about 5 minutes before serving. Garnish with chopped fresh basil or parsley if desired.

Notes

  • For a meat lover’s version, add cooked Italian sausage, diced ham, or cooked ground beef.
  • For a meatless version, omit the pepperoni and add mushrooms, bell peppers, spinach, olives, or onions.
  • For extra heat, add crushed red pepper flakes to the sauce or sliced jalapeños before baking.
  • For an extra-cheesy version, add more mozzarella, provolone, or small pieces of fresh mozzarella.
  • Frozen cheese tortellini can be used; prepare it according to the package directions before assembling the casserole.
  • The casserole can be assembled ahead, covered, and refrigerated until ready to bake. A chilled casserole may require additional baking time.
  • Store cooled leftovers in an airtight container in the refrigerator for 3 to 4 days.
  • Reheat individual portions in the microwave until hot throughout, adding a spoonful of pizza sauce if the pasta seems dry.
  • For larger portions, cover and reheat at 350°F (175°C) until heated through, removing the foil for the final few minutes if desired.
