Pistachio Pesto is a vibrant and flavorful twist on traditional pesto, combining fresh basil, buttery pistachios, Parmesan cheese, and olive oil. This versatile sauce is perfect for pasta, sandwiches, grilled vegetables, and appetizers.

Ingredients

  • 2 cups fresh basil leaves, packed
  • 1/2 cup shelled pistachios
  • 1/2 cup grated Parmesan cheese
  • 2 garlic cloves
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Add the basil leaves, pistachios, Parmesan cheese, and garlic to a food processor.
  2. Pulse several times until the ingredients are finely chopped.
  3. Slowly drizzle in the olive oil while processing.
  4. Continue blending until the pesto reaches the desired consistency.
  5. Add the lemon juice, salt, and black pepper.
  6. Pulse again until fully combined.
  7. Taste and adjust the seasoning if needed.
  8. Serve immediately or store in an airtight container.

Notes

  • Replace some of the basil with parsley for a milder flavor.
  • Add a handful of spinach for a slightly sweeter pesto.
  • Use Pecorino Romano cheese instead of Parmesan for a sharper taste.
