Ingredients
1 cup shelled pistachios (unsalted)
3 to 4 cups water
1 to 2 teaspoons honey or maple syrup (optional)
1/2 teaspoon vanilla extract (optional)
Pinch of salt (optional)
Instructions
Soak the pistachios in water for at least 4 hours or overnight.
Drain and rinse the pistachios.
Add the soaked pistachios and fresh water to a blender.
Blend on high for 1 to 2 minutes until completely smooth.
Strain the mixture through a nut milk bag, cheesecloth, or fine mesh strainer to remove pulp.
Stir in optional sweetener, vanilla extract, and a pinch of salt.
Transfer to a bottle or jar and refrigerate.
Notes
Use less water for a creamier milk or more for a lighter consistency.
