Pistachio milk is a smooth, creamy, and naturally nutty plant-based milk with a delicate sweetness. It’s a refreshing dairy-free option perfect for drinks, cereals, and smoothies.

Ingredients

  • 1 cup shelled pistachios (unsalted)
  • 3 to 4 cups water
  • 1 to 2 teaspoons honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Soak the pistachios in water for at least 4 hours or overnight.
  2. Drain and rinse the pistachios.
  3. Add the soaked pistachios and fresh water to a blender.
  4. Blend on high for 1 to 2 minutes until completely smooth.
  5. Strain the mixture through a nut milk bag, cheesecloth, or fine mesh strainer to remove pulp.
  6. Stir in optional sweetener, vanilla extract, and a pinch of salt.
  7. Transfer to a bottle or jar and refrigerate.

Notes

  • Use less water for a creamier milk or more for a lighter consistency.
  • Add dates for natural sweetness instead of honey.
  • Shake well before use as separation is natural.
  • Store in the refrigerator for up to 3 days.
  • Use leftover pulp in smoothies or baking.
