Pistachio Date Bars are naturally sweet, chewy bars packed with nutrient-rich dates and crunchy pistachios. These no-bake bars make a perfect healthy snack or dessert, combining wholesome ingredients with satisfying flavors and textures.

Ingredients

  1. 1 1/2 cups pitted Medjool dates
    1 cup shelled pistachios
    1/2 cup rolled oats
    1 tablespoon chia seeds (optional)
    1 teaspoon vanilla extract
    Pinch of salt

Instructions

Line an 8×8-inch baking pan with parchment paper.

  1. In a food processor, pulse pistachios and oats until roughly chopped.
  2. Add dates, chia seeds, vanilla extract, and salt. Process until the mixture begins to clump together but still has some texture.
  3. Transfer mixture to the prepared pan and press firmly into an even layer.
  4. Refrigerate for at least 1 hour to set.
  5. Remove from pan and cut into bars or squares.

Notes

  1. Add shredded coconut or cacao nibs for extra flavor and texture.
  2. Substitute pistachios with almonds, walnuts, or cashews.
  3. Roll bars in sesame seeds or crushed nuts before chilling.
  4. Add a pinch of cinnamon or cardamom for warm spice notes.
