These Pistachio Chocolate Popsicles are a rich, creamy frozen dessert that combines roasted pistachios with deep chocolate flavor. They’re easy to make ahead and perfect for cooling off on warm days.

Ingredients

  • 1 cup shelled pistachios, lightly roasted
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 4 ounces dark chocolate, melted
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chopped pistachios, for garnish (optional)
  • Melted chocolate, for dipping (optional)

Instructions

  1. Blend the roasted pistachios with the whole milk until smooth and creamy.
  2. Add the heavy cream, sweetened condensed milk, melted dark chocolate, cocoa powder, vanilla extract, and salt.
  3. Blend again until the mixture is fully combined and silky.
  4. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  5. Insert popsicle sticks and freeze for about 6 hours or until completely firm.
  6. To unmold, run warm water over the outside of the molds for a few seconds.
  7. If desired, dip each popsicle in melted chocolate and sprinkle with chopped pistachios before serving immediately.

Notes

  • Use white or milk chocolate for a sweeter variation.
  • Add a splash of almond extract for enhanced nutty flavor.
  • Stir mini chocolate chips into the mixture before freezing for extra texture.
  • Substitute full-fat coconut milk for the whole milk and cream for a dairy-free alternative.
  • Store popsicles in a freezer-safe airtight container with parchment paper between them for up to 2 months.
