Homemade Pistachio Butter is a rich, creamy spread made by blending pistachios until their natural oils create a smooth consistency. Enjoy it on toast, oatmeal, pancakes, fruit, or as a flavorful addition to desserts.

Ingredients

  • 2 cups shelled unsalted pistachios
  • 1/4 teaspoon salt
  • 12 teaspoons neutral oil or pistachio oil, optional
  • 12 tablespoons honey or maple syrup, optional
  • 1/2 teaspoon vanilla extract, optional

Instructions

  1. Place the shelled pistachios in a food processor or high-powered blender. If using raw pistachios and a deeper flavor is desired, lightly toast them first and allow them to cool slightly.
  2. Process the pistachios until finely ground. Continue blending as the mixture changes from crumbs to a thick paste.
  3. Stop occasionally to scrape down the sides of the food processor or blender, then continue processing as the pistachios release their natural oils.
  4. Process for several minutes until the pistachio butter reaches the desired smooth and creamy consistency.
  5. For a thinner consistency, blend in a small amount of neutral oil or pistachio oil.
  6. Add the salt and, if desired, honey or maple syrup and vanilla extract. Blend briefly until thoroughly combined.
  7. Taste and adjust the salt, sweetness, or consistency as desired, then transfer the pistachio butter to a clean airtight jar.

Notes

  • Unsalted pistachios make it easier to control the final seasoning.
  • Raw pistachios provide a fresher flavor and potentially brighter green color, while roasted pistachios have a deeper, toastier flavor.
  • Additional oil is usually unnecessary because pistachios release their own natural oils during processing.
  • If the mixture remains crumbly or thick, continue processing and scrape down the sides periodically.
  • For sweet pistachio butter, add honey or maple syrup gradually to taste.
  • For chocolate pistachio butter, blend in cocoa powder and a preferred sweetener.
  • For a white chocolate variation, stir in a small amount of melted white chocolate after processing the pistachios until smooth.
