Pistachio Butter is a smooth and creamy spread made from blended pistachios with a rich nutty flavor and naturally vibrant green color. This homemade nut butter is perfect for toast, smoothies, oatmeal, desserts, and snacks.

Ingredients

  • 3 cups shelled pistachios
  • 1 to 2 tablespoons neutral oil if needed
  • 1/4 teaspoon salt
  • Optional: honey or maple syrup
  • Optional: vanilla extract
  • Optional: cinnamon
  • Optional: white chocolate

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread the pistachios evenly on a baking sheet.
  3. Toast the pistachios for 5 to 7 minutes until fragrant.
  4. Allow them to cool slightly.
  5. Place the pistachios into a food processor.
  6. Blend until the nuts break down into crumbs.
  7. Continue blending, stopping occasionally to scrape down the sides.
  8. As the pistachios release their natural oils, the mixture will gradually become smooth and creamy.
  9. Add oil a little at a time if a smoother consistency is desired.
  10. Blend in the salt and any optional flavor additions.
  11. Transfer the pistachio butter to a clean jar or airtight container.

  • Blend with white chocolate or cocoa powder for dessert-style variations.
