A vibrant pink dragon fruit smoothie blended with banana and tropical fruit, then layered with a creamy vanilla yogurt swirl. This thick, refreshing smoothie is as beautiful as it is delicious.

Ingredients

  • 1 cup frozen pink dragon fruit chunks
  • 1 frozen banana
  • 1/2 cup frozen mango or pineapple
  • 3/4 cup coconut milk or almond milk
  • 1 tablespoon honey or maple syrup, optional
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vanilla Greek yogurt
  • 1 to 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon honey or maple syrup, optional

Instructions

  1. Prepare the vanilla swirl by combining the vanilla Greek yogurt, 1 to 2 tablespoons milk, 1/4 teaspoon vanilla extract, and optional honey or maple syrup in a small bowl. Stir until smooth and creamy, keeping the mixture fairly thick.
  2. Add the frozen pink dragon fruit, frozen banana, frozen mango or pineapple, coconut milk or almond milk, optional sweetener, and 1/2 teaspoon vanilla extract to a blender.
  3. Blend on high until completely smooth. If the smoothie is too thick to blend, add a small splash of milk at a time until it reaches a thick, creamy consistency.
  4. Spoon a little of the vanilla yogurt mixture around the inside of each serving glass.
  5. Pour in some of the pink smoothie, add another spoonful of vanilla mixture, and continue layering until the glasses are full.
  6. Gently run a spoon or straw through the layers once or twice to create a visible pink-and-white swirl without fully mixing the layers.
  7. Serve immediately while thick and frosty.

Notes

  • For an extra-tropical version, use coconut milk and frozen pineapple and garnish with shredded coconut.
  • Replace the mango or pineapple with frozen strawberries or raspberries for a berry variation.
  • For a dairy-free version, use thick coconut yogurt or another plant-based vanilla yogurt and plant-based milk.
  • For a thicker smoothie, start with less milk and gradually add only enough liquid for smooth blending.
  • For a smoothie bowl, significantly reduce the milk and top with the vanilla swirl, fresh fruit, granola, chia seeds, or coconut.
  • Keep both the smoothie and vanilla mixture thick to create a more defined swirl.
  • Store leftovers covered in the refrigerator for up to 24 hours and stir well before drinking.
  • For longer storage, freeze the pink smoothie mixture in ice cube trays and reblend the frozen cubes with a splash of milk before adding a freshly prepared vanilla swirl.
