A creamy tropical chia pudding made with coconut milk, juicy pineapple, and shredded coconut. This easy make-ahead recipe is perfect for breakfast, a refreshing snack, or a light dessert.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1/2 cup finely chopped or crushed pineapple
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons shredded coconut
  • Pinch of salt
  • Fresh pineapple for topping, optional
  • Toasted coconut for topping, optional

Instructions

  1. Add the chia seeds, coconut milk, maple syrup or honey, vanilla extract, and salt to a bowl or jar. Stir thoroughly until the chia seeds are evenly distributed.
  2. Let the mixture sit for 5 minutes, then stir again to break up any clumps and prevent the chia seeds from settling.
  3. Fold in the chopped or crushed pineapple and shredded coconut.
  4. Cover and refrigerate for at least 4 hours or overnight, until thick and creamy.
  5. Stir the pudding before serving. If it is too thick, mix in a small splash of coconut milk until it reaches the desired consistency.
  6. Divide between serving glasses or bowls and top with fresh pineapple and toasted coconut, if desired.

Notes

  • Use full-fat canned coconut milk for an extra-creamy pudding or refrigerated coconut milk for a lighter version.
  • For more pineapple flavor, blend some of the pineapple with the coconut milk before adding the chia seeds.
  • Add diced mango for a mango piña colada variation.
  • For extra crunch, add macadamia nuts, almonds, or granola immediately before serving.
  • Very ripe pineapple can provide enough sweetness to reduce or omit the maple syrup or honey.
  • Canned pineapple can be used, but drain it thoroughly before adding it to the pudding.
  • Store covered in the refrigerator for 3 to 4 days. Stir in a splash of coconut milk if the pudding becomes too thick.
  • The pudding can be frozen in an airtight container and thawed overnight in the refrigerator before serving.
