Ingredients

  • 2 medium red onions, thinly sliced
  • 1 cup white vinegar or apple cider vinegar
  • 1 cup water
  • 2 tablespoons sugar or honey
  • 1 tablespoon salt
  • 2 garlic cloves
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Thinly slice the red onions and place them in a clean glass jar or heat-safe container.
  2. In a small saucepan, combine the vinegar, water, sugar, salt, garlic, peppercorns, bay leaf, and optional red pepper flakes.
  3. Heat the mixture over medium heat, stirring until the sugar and salt dissolve completely.
  4. Carefully pour the hot pickling liquid over the sliced onions.
  5. Press the onions down so they are fully submerged in the liquid.
  6. Let the onions cool to room temperature.
  7. Cover and refrigerate for at least 30 minutes before serving for the best flavor.
  8. Enjoy on tacos, burgers, salads, sandwiches, or bowls.
