Ingredients

  • cooked chicken, shredded or diced
  • olive oil
  • butter
  • onion, diced
  • garlic cloves, minced
  • carrots, diced
  • celery, diced
  • frozen peas
  • all-purpose flour
  • chicken broth
  • milk or heavy cream
  • thyme
  • salt
  • black pepper
  • phyllo dough sheets
  • unsalted butter, melted

Instructions

  1. Preheat oven and prepare a baking dish.
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add onion, carrots, and celery and cook until softened.
  4. Stir in garlic and cook until fragrant.
  5. Sprinkle flour over vegetables and stir to form a roux.
  6. Gradually add chicken broth, stirring to prevent lumps.
  7. Add milk or cream and cook until thickened.
  8. Stir in chicken, peas, thyme, salt, and black pepper and simmer briefly.
  9. Transfer filling to baking dish.
  10. Layer phyllo sheets on top, brushing each with melted butter.

  12. Let cool slightly before serving.
