Pesto Penne Pasta is a simple and flavorful dish featuring tender penne pasta tossed in a vibrant homemade basil pesto sauce. Fresh herbs, garlic, Parmesan cheese, and olive oil create a rich and aromatic meal that’s perfect for any occasion.

Ingredients

  • 12 oz penne pasta
  • Salted water for boiling
  • 2 cups fresh basil leaves
  • 2 garlic cloves
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup pine nuts
  • 1/3 cup extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved (optional)
  • 1 cup grilled chicken, sliced (optional)
  • 1/2 lb cooked shrimp (optional)
  • 1/2 cup fresh mozzarella pearls (optional)
  • 1 cup spinach (optional)
  • Red pepper flakes for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the penne pasta according to package directions until al dente.
  3. Reserve 1/2 cup of pasta water, then drain the pasta.
  4. While the pasta cooks, combine the basil, garlic, Parmesan cheese, pine nuts, lemon juice, salt, and black pepper in a food processor.
  5. Pulse until finely chopped.
  6. Slowly drizzle in the olive oil while blending until the pesto is smooth.
  7. Transfer the drained pasta to a large serving bowl.
  8. Add the pesto sauce and toss until the pasta is evenly coated.
  9. Add a small amount of reserved pasta water if needed to loosen the sauce.
  10. Stir in any desired add-ins such as cherry tomatoes, grilled chicken, shrimp, or mozzarella pearls.
  11. Serve immediately with extra Parmesan cheese and red pepper flakes if desired.

Notes

  • Store-bought pesto can be used for a quicker version.
  • Walnuts, almonds, or sunflower seeds can replace pine nuts.
  • This pasta is delicious served warm or cold.
  • Freeze extra pesto for up to 3 months.
  • Add roasted vegetables for extra flavor and nutrition.
