Ingredients

  • 1 1/2 pounds lamb chops or lamb rack
  • 1/3 cup basil pesto
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Pat lamb dry and season with salt and black pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sear lamb on all sides until browned.
  5. Transfer lamb to a baking dish or keep in an oven-safe skillet.
  6. Spread basil pesto evenly over the lamb.
  7. Add minced garlic and lemon zest on top.
  8. Roast for 10–15 minutes depending on thickness and desired doneness.
  9. Remove from oven and let rest for 5–10 minutes.
  10. Sprinkle with parmesan cheese and serve warm.
