Pesto Crusted Salmon is a healthy, flavorful main course featuring tender salmon topped with fragrant basil pesto and a crisp Parmesan crust. It’s an elegant yet easy meal that pairs perfectly with vegetables, rice, potatoes, or a fresh salad.

Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1/3 cup basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil or lemon wedges, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish or line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels and season lightly with salt and black pepper.
  3. Spread an even layer of basil pesto over the top of each salmon fillet.
  4. Combine the Parmesan cheese, panko breadcrumbs, lemon zest, garlic powder, and olive oil in a small bowl.
  5. Sprinkle the Parmesan mixture evenly over the pesto-coated salmon.
  6. Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Drizzle with fresh lemon juice immediately after removing from the oven.
  8. Garnish with fresh basil or lemon wedges before serving if desired.
