Pesto Couscous is a quick and flavorful dish made with fluffy couscous tossed in vibrant basil pesto, fresh herbs, and simple mix-ins. It’s a versatile side or light meal that pairs perfectly with grilled vegetables, seafood, or your favorite protein.

Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth or water
  • 1 tablespoon olive oil
  • 1/2 cup basil pesto
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons toasted pine nuts or sliced almonds
  • 2 tablespoons chopped fresh basil or parsley
  • Salt, to taste
  • Black pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Bring the vegetable broth or water to a boil.
  2. Stir in the olive oil and couscous, then remove the pan from the heat.
  3. Cover and let stand for 5 minutes until the liquid is absorbed.
  4. Fluff the couscous with a fork and allow it to cool slightly.
  5. Stir in the basil pesto until the couscous is evenly coated.
  6. Gently fold in the cherry tomatoes, Parmesan cheese if using, toasted pine nuts or almonds, and fresh herbs.
  7. Season with salt and black pepper to taste.
  8. Serve warm or at room temperature with lemon wedges if desired.
