Ingredients

  • 2 lbs fresh mussels
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped onion or shallots
  • 1 cup white wine or broth
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges for serving

Instructions

  1. Clean the mussels by scrubbing the shells and removing any beards. Discard any that are open and do not close when tapped.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion or shallots and cook until softened.
  4. Stir in garlic and cook briefly until fragrant.
  5. Pour in white wine or broth and bring to a simmer.
  6. Add mussels to the pot and cover with a lid.
  7. Steam for 5 to 7 minutes, shaking the pot occasionally, until the mussels open.
  8. Discard any mussels that remain closed.
  9. Stir in butter and parsley, then season with salt and pepper.
  10. Serve immediately with lemon wedges and crusty bread.
