Ingredients

  • 8 thick slices of bread
  • 2 fresh ripe mangoes, peeled and diced
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 2 tablespoons sugar or honey
  • Maple syrup for serving
  • Powdered sugar for garnish

Instructions

  1. Peel and dice the mangoes into small pieces and set aside.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar or honey.
  3. Heat a skillet or griddle over medium heat and melt the butter.
  4. Dip each slice of bread into the egg mixture, coating both sides evenly.

  6. Cook for 2 to 3 minutes per side, or until golden brown and cooked through the center.
  7. Transfer the French toast to serving plates.
